Distinctly herby with fresh lemon to add punch; this Basil Smash cocktail makes a delicious summer aperitif.
BASIL SMASH
60ml The Uncommon Thread, London Dry gin
12 freshly-picked basil leaves
20ml lemon juice
10ml sugar syrup
Place a rocks glass or tumbler in the freezer to chill.
Tear the basil leaves and muddle (smash!) in the bottom of your cocktail shaker until very fine - almost a paste.
Add gin, lemon juice and sugar syrup, chuck in a handful of ice and shake for a good minute to get the flavour and colour out of the basil.
Strain with your shaker or cocktail strainer into a spare glass or jug.
Fill your chilled glass with ice and strain your cocktail into it (again) through a fine sieve.
Top with a couple of small, ideally boat shaped basil leaves and enjoy!
